Umbria: Orvieto Classico and Lago di Corbara DOC
Dear lovers of Italy and the good life, cooking and wine, here is Umbria! Still an unexplored territory full of beautiful art and nature. In the Tiber valley the Corbara lake is a must, with the hills lined by vines. Orvieto with its cathedral and Spello are medieval jewels not to be missed. And as for wine and food, some of the most famous dishes of Italy come from this area.
Day one
Meeeting point in Rome on the day of arrival and transfer by minibus to the Tenuta di Corbara, which lies about 12 km southeast of Orvieto. Then we go to the beautiful country house Orzalume, our home for a few days. The swimming pool offers a fantastic view over the entire region of Orvieto.
Around 16:00, visit to the winery Castello di Corbara. Here you will have Wine lesson no. 1 with our professional sommelier on the history of wine and its cultural importance, on the main vines of Umbria, wine cultivation techniques, the correct glasses, tasting of 3 wines. For the evening, dinner in a local restaurant .
Day Two
After breakfast at Casale Orzalume, and perhaps a first dip in the pool, we will go to restaurant Il Caio, where the first cooking class from 9:00 in the morning will be held by professional chef Paolo Trippini. We will then discuss ingredients and prepare a real Italian lunch that we will of course eat ourselves.
From there we will visit the Sagrantino area in Montefalco. At 15:00 we shall be at the winery of Arnaldo Caprai, one of the first and most famous producers of Umbrian enology. We will walk among the vineyards, and then into the cellars and have Wine lesson no. 2 (how to smell wine, typical scents of white and red wines, how to sharpen your senses again, identifying aroma and bouquet).
If there is enough time, we can also visit Spello with its picturesque streets and buildings. In the evening dinner in a local restaurant.
Day Three
After breakfast we meet our top chef Paolo Trippini at the restaurant Il Caio for the second cooking class. We will make fresh pasta, a few main courses and a dessert. At 15:00 appointment with another great producer of this wine region: Decugnano dei Barbi. This wine farm produces top white wine, such as the original Orvieto Classico Superiore and a great sparkling wine, made by classical methods. After visiting these vineyards and wine cellars, in an old medieval church, we have Wine lesson no.3 (tasting wine, the senses of tasting, the link between wine and territory). Today’s dinner is special: we go to Ristorante Trippini in Civitella del Lago, the restaurant of the Trippini family which has existed for generations and is now run by Paolo, our top chef teacher.
Day Four
After our last breakfast at Casale Orzalume, we leave for the castle of Titignano, a great discovery in this region and a very special experience. Titignano is a pearl of stone and travertine located in the emerald green of the Umbrian landscape, with an ancient and intense history. The farms of Salviano and Vaglia are part of the wine domain Titignano. Here the winemakers produce unique quality wines with international grape varieties. Giulio Fontani, the passionate farmer of the company, will give us a warm welcome and take us on a a great tour through the production of wine and extra virgin olive (EVO) oil. He speaks only Italian but everything will be translated into English. After this visit, with of course a tasting of wine and EVO oil, we go to the restaurant in the castle, for an unforgettable traditional Italian lunch. Following lunch, there will be time to relax and to go for a walk in the countryside around the castle. Then we say goodbye and leave for the Leonardo da Vinci airport in Fiumicino, near Rome.
